I love discovering and nurturing talent. When I met Yaniv in Miami, and he told me about his catering company Shiraz, I asked that he send me a sample menu so I could see what he really does. To say I was impressed would be putting it mildly. I immediately recognized the passion in his work, and now that I've tasted his food, I'm an ardent supporter.

Over the years I've worked with many caterers, but more often than not, any time I'm having a small party in my home, I always do everything myself. By chance, when I first moved into my Miami apartment, I hosted a series of parties back to back. One for the press, one a Christmas holiday party for friends, and another a holiday party for my employees. It was too much to do on my own, so I decided to make it easy on myself and hired Yaniv's company. Under my direction they took 100 percent care of the food and service, and allowed me to be a guest at my own party. It was flawless: from set-up to breakdown and everything in between.

We've since become the closest of friends, and Yaniv and I have had the pleasure of working together on many, many occasions. Talent and passion always shine. And each time we collaborate, Yaniv's company outdoes itself. The cream always rises to the top and in Miami, it just doesn't get any better.

      


Tips from Yaniv Cohen:

  • Use Local Ingredients. Nature is right every time! Local ingredients work well with the local climate. For instance, in Miami I find that adding tropical fruits to savory dishes adds the perfect balance of lightness and kick. My favorite local organic farm is Paradise Farms. Fresh, local, organic -- the perfect combo!
  • After Dinner Idea. Instead of serving hot coffee, serve shots of chilled espresso mixed with spiced rum, Frangelico or Kahlua. It’s quick, delicious, and will keep your guests dancing all night long.
  • Don't Be Shy to Learn. When you go out to a restaurant, a bar, a lounge, a wedding or any home party, and you taste something you like, don’t be afraid to ask for a recipe. You can put your own twist to it, but don’t forget to credit the source. Personally, I learned a lot by watching Colin entertain at his Miami home.
  • Sometimes Less is More. Remember that a great-tasting dish can be made with only a few ingredients. A premium cut of steak only needs some sea salt and fresh pepper to taste fantastic. Pesto is made of fresh basil, pine nuts, olive oil, garlic and Parmigiano. Yum!
  • We All Eat with Our Eyes First. A beautiful looking dish is an appetizing dish! Dedicate enough time for playing with your presentation beforehand. Let your creative juices guide you. Try outside the box ideas -- you'll be surprised at the results.
